Our concept
Our Restaurant
Welcome to The Twelve, where culinary innovation meets local flavours in an unforgettable dining experience.
All our dishes and menus are "designed" by Chef Olivier Gaillez, who has been with us since the beginning. His commitment to using locally sourced ingredients ensures that each plate is a masterpiece of flavour and innovation.
We take pride in partnering with local producers who share our commitment to quality and sustainability. Just as our à la carte menu changes seasonally, our lunch menu changes every week, showcasing the finest local produce from our trusted suppliers.
Our menu features a variety of vegetarian, vegan, and gluten-free options, ensuring that everyone can indulge in the culinary delights at The Twelve.

Monthly Cocktail: Indulge in our monthly cocktail, a special creation that highlights seasonal flavours and innovative mixology. Crafted with precision and flair by our talented bartenders, each monthly cocktail is a delightful surprise that adds a touch of excitement to your visit.
Cocktail Menu Rotation: Our cocktail menu changes every four months, ensuring that there's always something new and intriguing to discover. Whether you're a fan of classic concoctions or adventurous spirits, our ever-evolving menu promises to delight your palate and ignite your senses.
T-Gin: Introducing T-Gin, a harmonious fusion of Belgian and Norwegian craftsmanship. Just as our Restaurant The Twelve takes its name from the number of stars in the European Union flag, our T-Gin is crafted with 12 different botanicals. Infused with local ingredients such as distillate of beer, hops, and the unique Gagel Katje plant, our gin pays homage to Belgium's rich brewing heritage. Enriched with the freshness of rosemary and thyme sourced from Norway's landscapes, our gin offers a refreshing twist to your palate.
Thonnerke: "La Thonnerke" hails from a brewery near Brussels. It's a high-fermentation triple beer, with a bottle re-fermentation process. Its flavours are subtly bitter, with notes of cereals and a hint of honey. The brewery crafted this beer especially for the hotel.
